setting the standard 

2 things that make a huge difference are traceability and supply chain quality  

we’re rigorous about where our ingredients come from, and we make sure we build transparency into all our supplier agreements  

wherever possible we source ingredients that meet recognised international standards. for example, all our coffee comes from farms that are Fairtrade or Rainforest Alliance certified, and all our eggs are free range 

we collaborate with industry and official bodies on evolving policy and best practice. and as things change around the world, we review everything we do to make sure we have the best approach 

finding ways to do better helps to lower our impact. raising our standards helps to feed the people sustainably

we make a real difference when we work together 

bringing our suppliers on our sustainability journey is essential, because working together is the best way to make real progress 

it’s how we make sure that we’re all moving towards the same goals, and over the years our shared understanding of the issues grows together 

we turn commitment into action by making sustainability a standard part of our tender process, and building it into all our partnerships 

now, thanks to our supplier engagement programme and the regular workshops and surveys we run, we engage with our key suppliers directly 

our work to upskill our supply chain has been recognised by the UK hospitality sustainability summit, Planet Peach, who named us climate resilience heroes for 2026 

we work with GFSI-accredited (global food safety initiative) suppliers to support our mission of full transparency across food safety, quality and traceability 

we also work with SEDEX (supplier ethical data exchange) to manage our ethical and responsible practices in the supply chain 

about our meat and fish

we only work with suppliers who are as committed to animal welfare as we are 

we do this to make sure that every single piece of meat and fish we serve comes from a trusted source 

all our beef and pork meet strict EU and UK legislation, and follows the principles of the Farm Animal Welfare Council (FAWC) 5 freedoms for animal welfare 

being part of the Sustainable Chicken Forum (SCF) is our commitment to chicken welfare. it brings together farmers, experts and hospitality businesses to work for higher welfare standards  

all the salmon on our menu is sustainably sourced from Scottish fisheries and is RSPCA assured 

we do not allow any seafood on our menus that is rated 4–5 on the Marine Conservation Society (MCS) good fish guide, and all our prawns are BAP2* certified
